When he and Alfred are on the pleasure yacht, Bruce is picked up by a plane capable of water landings. When he does the sky-hook to pick up Lau, the plane that retrieves him is a C-130 Commando Solo, incapable of water landings. Given that the first plane was there just to pick Bruce up and get him to Hong Kong via non-official means, there is no reason to suspect that its crew knew him to be Batman. Likewise, the crew of the plane that picks him up in the "sky-hook" operation would have no reason to suspect him to be Bruce Wayne, given that he's in his Batman outfit when they pick him up and he's not shown to reveal himself as Bruce.
