The alien-like birds seen on a table at Palmo Plaza are actually real birds called "Brunner Pouter" - a breed of fancy pigeon.
The Ghor language was devised by dialect coach Marina Tyndall. Its structure was inspired by French, although it doesn't use any actual French vocabulary. The Ghor characters were played mostly by French and German actors, who spoke the fictional language with their own accents.

The over 500-foot-long outdoor Ghorman set was built on the same Pinewood Studios backlot that once housed the Jakku village and Maz's castle ruins sets for Star Wars: Episode VII - Das Erwachen der Macht (2015), Jedha City for Star Wars: Rogue One (2016), and the Kessel landing area for Solo: A Star Wars Story (2018).
