During pre-production, Francis Ford Coppola shot his own unofficial screentests with Al Pacino, James Caan, Robert Duvall, and Diane Keaton at his house in San Francisco. Robert Evans was unimpressed by them, and insisted that official screentests be held. The studio spent four hundred twenty thousand dollars on the screentests, but in the end, the actors and actresses Coppola originally wanted were hired.

When Michael is telling Kay about Luca Brasi, she has a cigarette in her left hand which disappears and reappears between shots. A few seconds later, the cigarette is gone and Kay has a fork in her left hand which then jumps to her right hand.
In the Blu-Ray version, the 2002 Paramount logo is used and tinted in sepia.
The original UK cinema version suffered minor BBFC cuts to the killing of Sonny with edits to gunshot closeups and his body being kicked in the head. All later releases were uncut.
