When Homer brings Sarah to the hotel room, it is night time, and Sarah makes reference to how late everyone is staying up. A minute later, Severen goes out and gets Loy, and it is still night. Two minutes later, when the Coltons flee the room, it is broad daylight out.
When Homer is on his knees in the middle of the road the station wagon with Diamond Back and Jesse is seen driving in the opposite direction. In the very next shot the station wagon is driving directly toward Caleb.
When Caleb runs from the bungalow with the blanket over his head, we see the bullet wounds to his legs. In the next shot we see the bullets being fired and entering.
Incorrectly regarded as goofs
Original post: "In the bar, when Jesse is igniting bottles to torch the place, we see several of the bottles shatter in their hands prematurely before they're thrown, obviously break-away props gripped too hard by the actors." Actually, since vampires have super-human strength, it is consistent that they could accidentally break real glass bottles like that.
When Caleb punches the truck driver in the bar, the driver goes flying. You can see the cord which helps pull the driver across the room and into the pool table.

When Caleb is running from the motel and burning in the daylight at one point you can see the pipes running up the back of his jacket making the smoke.

When Caleb approaches Mae for the first time.
When Mae first meets Caleb she points out a star and observes that the light from it "might have been traveling for a billion years." No star visible to the naked eye is a billion light years away. In fact our entire galaxy is just 100,000 light years across, the stars actually visible in the sky only a tiny fraction of that.
Caleb, being intimately aware of the vampires' character and abilities, fails to prepare for them following him home. Even after seeing Mae, he does not think to take any measures to protect his family.
