The protagonist in this episode makes himself out to be sustainable and ethical, but then mentions using foie gras. In other words, the protagonist is a pretender. There is NO METHOD where foie gras is ethical. Shame on this chef for marketing himself as something he is not. He may make tasty pizzas, but he lies about his motives and how he prepares his foods. The man is a charlatan, who markets himself as something very different than the reality. Foie gras is made by force-feeding fowl so much food than their livers expand. It is cruel and opportunistic, no matter how it is made. Do not believe for a second the hype.
