Ego tells Quill that he wanted to experience what it was to be human-- but at the point in time he's describing, he had not yet encountered any other life. (In point of fact, humans aren't even the first species he discovers or mates with). However, at that time, Ego was trying to gain Quill's empathy before telling him the truth - he used "humans" since his son was half human, but was lying.
There is a statement in the closing credits: "No raccoons or tree creatures were harmed during the making of this feature. The same cannot be said for handlers of said raccoons and tree creatures."
