At the start of the first episode, it states that it is 5 BBY (Before the Battle of Yavin). Meaning it's 5 years before Rogue One and A New Hope. And 4 years after the Obi-Wan Kenobi series.

No. It was always intended to only be two seasons. The SAG-AFTRA strike had delayed production, pushing the release for season 2 in to 2025. But it will come out and have a definitive ending.
